Pan-Fried Mascarpone and Cherry Crepes

Mascarpone and cherry pancakes

Ingredients:

For the batter:

  • 1 cup milk (200g)
  • 1 cup sparkling water (200g)
  • 3 eggs
  • 1.5 cups flour
  • Pinch of salt
  • 2 tablespoons sugar
  • 3 tablespoons oil

For the filling:

  • 250g mascarpone cheese
  • 2-3 tablespoons powdered sugar
  • Pitted cherries

Mix the mascarpone with the powdered sugar. Adjust the sweetness to taste. Transfer the mixture to a piping bag for easier filling.

Place a row of cherries on each crepe, then fold it over once. Squeeze a thick strip of mascarpone from the piping bag onto the crepe, then roll it up. Serve the crepes immediately, or pan-fry them in oil for extra crispness and a gooey center. No additional sauce is needed—the mascarpone melts while frying and forms its own sweet sauce.
