Three No‑Fuss Salads That Pack a Vitamin Punch

Fresh cabbage salad
Cucumbers in Sour Cream
Slice the cucumbers into rounds and sprinkle them with salt. Mash hard-boiled egg yolks and mix them with sour cream and a pinch of hot pepper. Top the salad with finely chopped dill and parsley.

Fresh Cabbage Salad
Finely shred the cabbage. Pour a hot marinade over it (for 1 liter of boiled, cooled water, mix in a tablespoon of vinegar, a tablespoon of salt, a tablespoon of sugar, a bay leaf, and half a teaspoon of red pepper). Once the cabbage softens, drain the liquid through a colander, then add chopped onions and grated carrots, along with some oil.

In a salad bowl, place chopped lettuce leaves. Arrange slices of cucumbers, radishes, boiled new potatoes, carrots, and green onions around the edges. Arrange boiled eggs in a lily shape in the center. Garnish with sprigs of dill and parsley.
Serve sour cream on the side with salt and pepper.
