Sardine Toasts: Quick Savory Open-Faced Sandwiches

Fish croutons

  • 1 can of sardines
  • 1 small onion (diced)
  • 1 small carrot (grated)
  • 2 eggs
  • 3 cloves of garlic
  • 1/2 bunch of parsley leaves
  • 5-6 slices of bread
  • salt, black pepper, mayonnaise, oil
  1. Sauté the onion in vegetable oil until golden brown.
  2. Add the grated carrot and cook for about 10 minutes.
  3. Meanwhile, mash the sardines with a fork, then mix in the grated boiled eggs, finely chopped parsley, and grated garlic into the mashed sardines.
  4. Next, combine the sautéed carrot and onion with the sardine mixture.
  5. Add mayonnaise and season with salt and black pepper to taste.
  6. Toast the bread.
  7. Spread the mixture over the toasted bread.
