Apricot Pie

Ingredients:
– 3 eggs
– 200g sugar (about 1 cup)
– 150g butter (about 10.5 tablespoons)
– 150g flour (about 1 cup)
– 150g sour cream (a thicker, tangier version of sour cream common in Eastern European cuisine)
– 0.5 tsp baking powder
– 5-6 apricots

Instructions:
Beat the eggs with the sugar, then add the butter and continue to beat until well combined. Next, mix in the sour cream, flour, and baking powder, and beat everything together until smooth.
Cut the apricots into quarters.
Line a baking dish with parchment paper (make sure to grease the parchment with butter or margarine to prevent sticking during baking).
Pour the batter into the prepared dish and arrange the apricot pieces on top.
Place the pie in a preheated oven and bake for 30-35 minutes at 200 degrees Celsius (about 400 degrees Fahrenheit).
Remove from the oven, let it cool, and serve.
