Pancakes with Onions

– 500 g all-purpose flour
– 2 cups water
– 1 onion
– ½ bunch green onions
– 1 teaspoon sugar
– 15 g yeast
– Vegetable oil, salt

1. In a bowl, mix together the flour, water, yeast, salt, and sugar to make the batter for the pancakes. Allow the batter to rise.

2. Peel and finely chop the onion, then lightly sauté it in oil and season with salt to taste. Rinse the green onions, pat them dry, and chop them finely (set aside a few stalks for garnish).

3. Once the batter has risen, add the sautéed onion and green onions, mixing thoroughly.

4. Let the batter rise again, then cook the pancakes. Serve them rolled up and garnished with pancake roses and green onion stalks.
