Potato Pancakes with Mushroom Sauce

Potato Draniki with Chicken and Forest Mushrooms

Ingredients

  • 6 potatoes
  • 1.5 tablespoons of flour
  • 1 egg
  • 2 onions
  • 400g of chicken fillet (about 0.9 lbs)
  • 120g of forest mushrooms (about 4.2 oz)
  • Vegetable oil, to taste
  • 50g of sour cream (about 1.8 oz)
  • 1 cup of chicken broth
  • Salt and spices, to taste

Instructions

Peel the potatoes and grate them finely. Add salt to the grated potatoes. Peel one onion and chop it finely, then mix it with the potatoes. Beat in the egg and add the flour. Mix everything thoroughly.

Heat a skillet with oil, then spoon the potato mixture onto the skillet and fry on both sides until golden brown.

Cut the chicken fillet into small pieces and chop the remaining onion. Sauté them together in a deep skillet.

Boil the forest mushrooms in salted water. Once the mushrooms are ready, add them to the sautéed chicken and onion. Pour in the chicken broth, add spices, and simmer for 5 minutes. Stir in the sour cream and continue to simmer for another 10 minutes.

Serve the draniki topped with the mushroom and chicken sauce. Optionally, garnish with fresh herbs.
