Fried Tomatoes

Select firm tomatoes, wash them, and slice into 1 cm thick rounds. Sprinkle with salt and ground pepper, coat in flour, and fry until golden. Then, place them in a saucepan or deep skillet greased with fat, pour sour cream over the top, sprinkle with breadcrumbs, drizzle with more fat, and bake in the oven.

For every 2.2 lbs (1 kg) of tomatoes, use:
– 3 tablespoons of butter
– 3 tablespoons of all-purpose flour
– 1 tablespoon of breadcrumbs
– 3 peppercorns

For the sauce, you’ll need:
– 2 cups of broth
– 1 tablespoon of all-purpose flour
– 1 tablespoon of butter
– 3/4 cup of sour cream.
