Appetizer-Garnish “Mushroom and Zucchini Duo”

Zucchini and Mushroom Salad

Ingredients:

  • 2 zucchini (or courgettes)
  • 500g (about 1 lb) mushrooms
  • A piece of ginger
  • 0.5 tsp honey
  • 1 tsp mustard
  • 2 tbsp olive oil
  • 0.5 bunch of dill and parsley
  • 2 cloves of garlic
  • 2 packets of salad seasoning (dried herbs)
  • Salt, black pepper, coriander, and ground nutmeg to taste

Slice the zucchini into rounds (do not salt them). Grease a skillet with olive oil, arrange the zucchini in a single layer, and sauté until golden brown on both sides. Slice the mushrooms and sauté them as well.

In a bowl, mix the salad seasoning with 2 tablespoons of water, olive oil, honey, mustard, grated ginger, minced garlic, salt, pepper, coriander, and nutmeg.

Once the zucchini rounds are cooked, remove them from the skillet and place them in a plastic container. Drizzle with the sauce and sprinkle with chopped herbs. Next, layer the mushrooms, drizzle with sauce, and sprinkle with herbs. Repeat the layering process a few times.
