Stuffed Chicken Rolls with Almonds and Mint

Ingredients

  • 4 chicken fillets
  • 50g Parmesan cheese (about 1.75 oz)
  • 40g almonds (about 1.4 oz)
  • 7-8 sprigs of fresh mint
  • 1 onion
  • 3-4 tablespoons olive oil
  • Sunflower oil for frying
  • Salt and black pepper to taste

Instructions

  1. Toast the almonds in a dry, well-heated skillet for a few minutes until golden. Let them cool.
  2. Peel, wash, and finely chop the onion.
  3. Wash the mint, reserving a few leaves for garnish.
  4. In a blender, combine the mint, onion, almonds (set aside a few for garnish), and olive oil, blending until smooth.
  5. Grate the Parmesan cheese and add it to the mixture, stirring well to combine.
  6. Wash and pound the chicken fillets to an even thickness.
  7. Spread the filling over each fillet and roll them up, securing with toothpicks.
  8. Season each roll with salt and pepper to taste.
  9. Heat sunflower oil in a skillet and fry the rolls over high heat for a few minutes on each side.
  10. Then, cover the skillet with a lid, reduce the heat, and cook the rolls for 20 minutes, turning occasionally.
  11. Before serving, remove the toothpicks from the rolls, place them on plates, and garnish with almonds and mint.
  12. Serve with fresh tomatoes.
