Lecho for Breakfast

Lecho

Ingredients:

  • 2 onions
  • 2 medium carrots
  • 2 zucchini
  • 2 eggplants
  • 2 tomatoes
  • 2 bell peppers
  • 200 grams of bacon
  • 1 bunch of parsley
  • Salt and ground pepper to taste
  • 150-200 grams of oil
  • A pinch of hot pepper (paprika) to taste, optional

Dice all the vegetables. Start by sautéing the onions, then add the carrots and cook them a bit as well. Next, add the bacon and all the other ingredients. Season with salt and pepper to taste. Stir well and simmer over low heat for 30-40 minutes.

This dish pairs wonderfully with canapés and butter, and it can also serve as a side dish for meat.
