Turkey Breast with Mandarin and Cheese

  • Turkey breast – 500 g (about 1.1 lbs)
  • Mandarins – 4-5 pieces
  • Cheese – 30-50 g (about 1-2 oz)
  • Soy sauce – 2 tablespoons
  • Salt and black pepper to taste

Start by preparing the marinade. Squeeze the juice from 2-3 mandarins and mix it with the soy sauce.

Cut the turkey breast into pieces suitable for making cutlets, then pound them under plastic wrap. Season with salt and pepper. Place the meat in the marinade for at least 30 minutes.

Peel the remaining 2-3 mandarins, removing the skin and any white pith. Take 2-3 segments of mandarin and wrap them in each piece of turkey like a roll. Secure with toothpicks and place in a baking dish. Pour the marinade over the top.

Preheat your oven to 340°F (170°C) and bake for 20-30 minutes. Sprinkle grated cheese on top and return to the oven for an additional 10 minutes.
