200 g of beans (about 7 oz),
2 eggs,
150 g of cheese (about 5.3 oz),
3 tablespoons of milk,
Salt and black pepper to taste,
Oil for greasing the molds.
Soak the beans in warm salted water for a couple of hours, or overnight. Cook until tender.
Grate the cheese finely, then beat in the eggs, add the milk, and season with salt and pepper. Mix well until you achieve a smooth consistency, or blend with an immersion blender.
Grease muffin or cupcake molds with vegetable oil and place a layer of beans at the bottom.
Top with a tablespoon of the cheese mixture.
Then add another layer of beans followed by more cheese mixture. Alternate layers of beans and cheese mixture until the molds are filled.
Place in a preheated oven at 180 °C (350 °F) and bake until cooked through. Once the casseroles have cooled, remove them from the molds and garnish as desired.
