Carrot and Apple Fritters
Ingredients
- Carrots: 3, grated
- Apples: 2, grated
- Raisins: a handful
- Sugar: 2-3 tablespoons
- Flour: 150g (about 1.2 cups)
- Eggs: 2
- Baking soda: ½ teaspoon
- Vegetable oil for frying
Instructions
- Peel the apples and carrots, then grate them.
- Soak the raisins in hot water for 5-10 minutes.
- Sift the flour together with the baking soda.
- Beat the eggs with the sugar, then add the flour mixture and stir until smooth.
- Fold in the grated carrots, apples, and soaked raisins.
- Using a tablespoon, drop the batter onto a hot skillet and fry until golden brown on both sides, about 3-4 minutes per side.
- Transfer the cooked fritters to a paper towel to drain excess oil.
- Serve warm, optionally with sour cream.
