Carrot Fritters

Carrot and Apple Fritters

Ingredients

  • Carrots: 3, grated
  • Apples: 2, grated
  • Raisins: a handful
  • Sugar: 2-3 tablespoons
  • Flour: 150g (about 1.2 cups)
  • Eggs: 2
  • Baking soda: ½ teaspoon
  • Vegetable oil for frying

Instructions

  1. Peel the apples and carrots, then grate them.
  2. Soak the raisins in hot water for 5-10 minutes.
  3. Sift the flour together with the baking soda.
  4. Beat the eggs with the sugar, then add the flour mixture and stir until smooth.
  5. Fold in the grated carrots, apples, and soaked raisins.
  6. Using a tablespoon, drop the batter onto a hot skillet and fry until golden brown on both sides, about 3-4 minutes per side.
  7. Transfer the cooked fritters to a paper towel to drain excess oil.
  8. Serve warm, optionally with sour cream.
