Vegetable Stew with Meat

Pork Stew with Vegetables

Ingredients:

  • 300 g (approx. 0.66 lbs) pork shoulder
  • 1 zucchini
  • 1 eggplant
  • 1 bell pepper
  • 1-2 tomatoes
  • 1 onion
  • 3-4 cloves of garlic
  • 2 tablespoons tomato paste
  • 1 tablespoon red wine vinegar
  • 1-2 teaspoons sugar (or honey)
  • Salt, black pepper, and khmeli-suneli (a Georgian spice blend) to taste

Instructions:

Cut the pork into small cubes. Dice the vegetables into similarly sized small cubes.

In a multicooker, set to the “baking” mode with the lid open, sauté the pork, stirring occasionally.

Once the pork is browned, add the diced vegetables, mix well, and sauté for a bit before switching the multicooker to the “stewing” mode (set the timer for 1 hour).

About 30 minutes in, check the vegetables—they should release some juice. If there isn’t enough liquid, add a little boiled water. Stir in the tomato paste, salt, pepper, vinegar, sugar, and khmeli-suneli, and continue to stew until everything is cooked through.

When the vegetables and meat are ready, peel and mince the garlic, then add it to the stew. Mix well and turn off the heat.
