Oat Flour Pancakes
Ingredients:
- Oat flour: 2 cups
- Eggs: 2
- Sugar (preferably brown): 3 tablespoons
- Kefir: 2 cups
- Baking powder: 2/3 teaspoon
- In a large bowl, combine all the ingredients. Mix thoroughly. If needed, use a mixer for a smoother batter.
- Heat a non-stick skillet. Using a tablespoon, drop the batter onto the skillet. No oil or butter is necessary—this helps keep the calories down and ensures the pancakes have a nice, even surface. Cook on low heat.
- Once bubbles start to form on the surface of the pancake, flip it over. After 5-10 seconds, remove it from the skillet.
