Pork Cutlets in Sesame Crust

Pork cutlets in sesame coating

Pork loin: 300 g (about 10.5 oz)
Egg: 1
Mayonnaise: 1 tsp
Flour: 3 tbsp
Breadcrumbs: 70 g (about 2.5 oz)
Sesame seeds: 30 g (about 1 oz)
Coriander, black pepper, and salt: to taste
Oil: for frying

1. Rinse the meat and slice it across the grain into pieces about 0.5 cm thick (approximately 0.2 inches). Gently pound the pieces on both sides and rub them with a mixture of salt, black pepper, and coriander.
2. Beat the egg with the mayonnaise and add a pinch of salt. Mix the breadcrumbs with the sesame seeds.
3. Dredge the pork in flour, dip it in the egg mixture, and coat it with the breadcrumb and sesame mixture. Fry in hot oil over low heat on both sides until golden brown.
* If the meat is tough, pound it well, coat it with mayonnaise, and let it sit for an hour.
