Ingredients:
– Spaghetti – 300g (about 10.5 oz)
– Bacon – 100g (about 3.5 oz)
– 4 egg yolks or 2 whole eggs
– Heavy cream – 100ml (about 1/2 cup)
– Hard cheese – 100g (about 3.5 oz)
– Garlic – 1 clove
– Parsley, salt, pepper
Instructions:
1. Cut the bacon into thin strips or small cubes.
2. Mince the garlic and chop the parsley.
3. In a saucepan over low heat, cook the bacon until the fat renders.
4. Add the garlic, parsley, and pepper, and stir to combine.
5. In a bowl, whisk together the egg yolks and cream, then stir in the grated cheese, salt, and pepper.
6. Cook the spaghetti in a large pot of salted water (boil for 1 minute less than the package instructions indicate).
7. Drain the spaghetti in a colander.
8. Once the water has drained, add the spaghetti to the saucepan with the cooked bacon and mix well.
9. Pour the creamy sauce over the spaghetti and toss to combine thoroughly.
10. Remove the saucepan from the heat and serve immediately.
11. Before serving, sprinkle the carbonara with additional parsley and grated cheese.
