Pasta with Liver and Caramelized Onions

Chicken Liver Pasta Recipe

Ingredients

  • 2 medium onions
  • 500g chicken liver (about 1.1 lbs)
  • 200ml heavy cream (about ¾ cup)
  • Vegetable oil
  • 4-5 tablespoons broth (from cooking pasta)
  • Salt and pepper to taste
  • Pasta (such as spaghetti)

Instructions

  1. In a skillet, heat a little vegetable oil and sauté the chicken liver, cut into small pieces, until browned on both sides.
  2. Meanwhile, bring water to a boil for the pasta.
  3. Cook the pasta in salted water until al dente.
  4. While the pasta is cooking, peel and slice the onions into rings (or half-rings).
  5. In a second heavy-bottomed skillet, sauté the onions in oil until they turn a caramel brown color.
  6. Pour in the heavy cream, add the sautéed liver, and season with salt and pepper to taste.
  7. Add the cooked pasta along with 4 tablespoons of the pasta water.
  8. Mix everything together, let it heat for a minute or two, and serve immediately!
