Pasta with Liver and Caramelized Onions
Chicken Liver Pasta Recipe
Ingredients
- 2 medium onions
- 500g chicken liver (about 1.1 lbs)
- 200ml heavy cream (about ¾ cup)
- Vegetable oil
- 4-5 tablespoons broth (from cooking pasta)
- Salt and pepper to taste
- Pasta (such as spaghetti)
Instructions
- In a skillet, heat a little vegetable oil and sauté the chicken liver, cut into small pieces, until browned on both sides.
- Meanwhile, bring water to a boil for the pasta.
- Cook the pasta in salted water until al dente.
- While the pasta is cooking, peel and slice the onions into rings (or half-rings).
- In a second heavy-bottomed skillet, sauté the onions in oil until they turn a caramel brown color.
- Pour in the heavy cream, add the sautéed liver, and season with salt and pepper to taste.
- Add the cooked pasta along with 4 tablespoons of the pasta water.
- Mix everything together, let it heat for a minute or two, and serve immediately!
