Ingredients:
- 150 g cheese (grated)
- 2 bell peppers (red and yellow)
- 2 tablespoons minced garlic
- 1 onion (red or white)
- 1/3 of a chili pepper
- 1 cup cornmeal
- 2 teaspoons butter
- 2 cups water
- 1 tablespoon sugar
- Salt to taste
Instructions:
- In a pot, combine water, salt, sugar, and cornmeal. Stir continuously until the water comes to a boil.
- Add the butter and a portion of the grated cheese, and cook for 10 minutes. Transfer the corn mixture to a baking dish.
- In a skillet, sauté the sliced onion, julienned bell peppers, minced garlic, and chili pepper in some oil. Season with salt to taste.
- Arrange the sautéed vegetables around and on top of the corn mixture. Sprinkle with the remaining grated cheese.
- Bake in a preheated oven until cooked through. Serve garnished with fresh herbs.
