Polenta with Cheese and Vegetables

Ingredients:

  • 150 g cheese (grated)
  • 2 bell peppers (red and yellow)
  • 2 tablespoons minced garlic
  • 1 onion (red or white)
  • 1/3 of a chili pepper
  • 1 cup cornmeal
  • 2 teaspoons butter
  • 2 cups water
  • 1 tablespoon sugar
  • Salt to taste

Instructions:

  1. In a pot, combine water, salt, sugar, and cornmeal. Stir continuously until the water comes to a boil.
  2. Add the butter and a portion of the grated cheese, and cook for 10 minutes. Transfer the corn mixture to a baking dish.
  3. In a skillet, sauté the sliced onion, julienned bell peppers, minced garlic, and chili pepper in some oil. Season with salt to taste.
  4. Arrange the sautéed vegetables around and on top of the corn mixture. Sprinkle with the remaining grated cheese.
  5. Bake in a preheated oven until cooked through. Serve garnished with fresh herbs.
