Vegetable Rice with Cabbage

Ingredients:

  • 100 g (about 3.5 oz) round rice
  • 500 g (about 1.1 lbs) white cabbage
  • 1 onion
  • 1-2 carrots
  • 100 ml (about 3.4 fl oz) tomato juice
  • 100 ml (about 3.4 fl oz) olive oil
  • Green onions and parsley to taste
  • Salt, black peppercorns, chili pepper, and coriander to taste

Shred the cabbage. Cut the onion into large cubes and slice the carrots into rounds.

In a pan, heat the olive oil and sauté the onion until it becomes translucent, then add the carrots. Stir in the chopped green onions and cabbage, cooking over high heat while constantly stirring.

Once the cabbage is slightly browned, add the tomato juice and spices, mix well, and reduce the heat to low. Add the rice and water, using twice as much water as rice. Cover with a lid and simmer until the rice is cooked through.

Once ready, garnish the dish with herbs and chili pepper.
