Start by bringing a pot of water to a boil. Take 2.2 lbs of pork belly, wash it, pat it dry with a paper towel, and rub it with salt, garlic, and finely chopped bay leaves. Make incisions in the pork belly and stuff them with garlic. You can also sprinkle it with curing spices, which are available at any grocery store, or substitute them with red and black pepper, coriander, and other spices.
Next, place the pork belly in a cooking bag and boil it in the pot for about 30 minutes. Once done, turn off the heat and let the pork belly cool in the pot.
