Start by creaming 80 grams (about 5.6 tablespoons) of butter until fluffy. Then, add 2 egg yolks, 2 tablespoons of sugar, and half a cup of milk with a piece of yeast the size of a walnut dissolved in it. Gradually mix in enough flour to form a soft dough.
Roll out the dough to a thickness of 0.5 cm (about 1/4 inch), cover it with a mixture of 2 egg whites whipped with 200 grams (about 1 cup) of sugar and 100 grams (about 1 cup) of ground nuts, and then roll it up into a log.
Slice the log into 1 cm (about 0.4 inch) wide pieces and bake them in a moderately hot oven. While the cookies are still warm, sprinkle them with vanilla sugar.
