Rolled Holiday Cookies with Vanilla Sugar

Cream 80 grams (about 5.6 tablespoons) of butter until fluffy. Dissolve a walnut-sized piece of yeast in 1/2 cup of milk, then add the milk, 2 egg yolks, and 2 tablespoons of sugar to the butter. Gradually mix in enough flour to form a soft dough.

Roll the dough to a thickness of 0.5 cm (about 1/4 inch). Whip 2 egg whites with 200 grams (about 1 cup) of sugar, fold in 100 grams (about 1 cup) of ground nuts, spread the mixture over the dough, and roll the dough up into a log.

Slice the log into 1 cm (about 0.4 inch) pieces. Bake the cookies in a moderately hot oven. While the cookies are still warm, sprinkle them with vanilla sugar.
