Chopped Schnitzel

Bacon: 8 slices
Pork mince: 500-550 g (about 1.1-1.2 lbs)
Eggs: 4
Salt, pepper, breadcrumbs, vegetable oil

  1. Fry the bacon slices in a dry skillet until both sides are crispy and golden brown. Then, transfer them to a paper towel or napkin to absorb any excess grease.
  2. In a bowl, crack an egg into the prepared pork mince and add the breadcrumbs. Mix well, then shape the mixture into 4 small, flat schnitzels.
  3. In the skillet where you cooked the bacon, add some vegetable oil. Fry the schnitzels for about 3 to 4 minutes on each side until they develop a crispy crust. Once done, remove the schnitzels from the skillet.
