Ingredients:
- Beef tongue
- Meat (I use a tenderloin, or if they’re small, even two, overlapping them as we say “in a staggered fashion”)
- Mayonnaise
- Salt and pepper
- Garlic
First, boil the tongue and peel it.
Next, take the meat and pound it well. Rub it with mayonnaise, salt, and pepper, then squeeze in 2-3 cloves of garlic. Wrap the tongue in the meat.
Spread more mayonnaise on top, sprinkle with salt and pepper, and add more garlic.
Bake in the oven. To keep it tender, I either bake it in a sleeve (making sure to tear the sleeve at the end so the top of the roll browns) or pour a little water at the bottom of the baking dish.
