Pickled beetroot

Select small, ripe beets that are vividly colored. Wash and peel them, then place them in a prepared container. Pour a 3% salt solution over the beets and let them sit at room temperature for several days, periodically skimming off any foam that forms on the surface. Store in a cool place.

Beets – 2.2 lbs, salt – 1 oz, water – 4.2 cups
