Pork Baked with Cranberries

Ingredients:

  • A piece of pork
  • Garlic
  • Carrot
  • 250 g (about 2 cups) of cranberries
  • Spices to taste (salt, pepper, etc.)
  • Sugar

Instructions:

  1. Marinade: Pass 150 g of cranberries through a sieve, then add sugar and salt to taste, ensuring the marinade isn’t too sour.
  2. Prepare the meat: Stuff the pork with garlic and julienned carrots, placing 2-3 cranberries in each incision. Then, marinate the meat in the crushed cranberry mixture for a couple of hours.
  3. Bake: Wrap the meat in foil and bake at 180°C (about 350°F) until fully cooked. Serve with fresh cranberries on the side.

This pork dish will be a stunning centerpiece for any table.
