Oven-Baked Pork with Vegetables
Ingredients:
- 300-400 g (approx. 0.7-0.9 lbs) of pork (shoulder or loin)
- 4 hunter-style sausages
- 1-2 bell peppers
- 3-4 carrots
- 1 tablespoon of oil
- Green onions for garnish
For the Sauce:
- 100 g (approx. 0.4 cups) of tomato ketchup
- 100 g (approx. 0.4 cups) of water
- 2 tablespoons of soy sauce
- 1 tablespoon of wine vinegar
- 1 tablespoon of brown sugar
- 1 teaspoon of lemon zest
- Paprika, salt, and black pepper to taste
Cut the vegetables into large pieces and sauté them in oil. Add the chopped pork and hunter-style sausages.
Prepare the sauce by mixing all the sauce ingredients in a bowl. Pour the sauce over the meat and vegetables.
Cover and simmer on low heat for 20 minutes. If the sauce evaporates too quickly, feel free to add a little more water.
Garnish with green onions before serving.
