Pork with Vegetables in Barbecue Sauce

Oven-Baked Pork with Vegetables

Ingredients:

  • 300-400 g (approx. 0.7-0.9 lbs) of pork (shoulder or loin)
  • 4 hunter-style sausages
  • 1-2 bell peppers
  • 3-4 carrots
  • 1 tablespoon of oil
  • Green onions for garnish

For the Sauce:

  • 100 g (approx. 0.4 cups) of tomato ketchup
  • 100 g (approx. 0.4 cups) of water
  • 2 tablespoons of soy sauce
  • 1 tablespoon of wine vinegar
  • 1 tablespoon of brown sugar
  • 1 teaspoon of lemon zest
  • Paprika, salt, and black pepper to taste

Cut the vegetables into large pieces and sauté them in oil. Add the chopped pork and hunter-style sausages.

Prepare the sauce by mixing all the sauce ingredients in a bowl. Pour the sauce over the meat and vegetables.

Cover and simmer on low heat for 20 minutes. If the sauce evaporates too quickly, feel free to add a little more water.

Garnish with green onions before serving.
