Pumpkin Patties with Mixed Meat Filling

Ingredients

  • 1 medium pumpkin
  • 14 oz. mixed ground meat (pork and beef)
  • 1 cup milk
  • 1/2 cup semolina
  • 1 onion
  • 2 eggs
  • 2 tablespoons sugar
  • Salt, pepper, and breadcrumbs

Instructions

Peel the pumpkin and remove the seeds, then grate it. Season with salt, place it in a skillet with heated oil, and sauté over medium heat until tender.

Add the sugar, pour in the milk, and gradually stir in the semolina, mixing constantly to prevent lumps from forming. Once the semolina is cooked, remove the skillet from the heat and let the mixture cool.

Finely chop the onion and sauté it until golden brown. Add the ground meat and cook, stirring frequently, until fully cooked. Set aside to cool.

Once the pumpkin mixture has cooled, add the beaten eggs and mix thoroughly. Shape the mixture into patties, placing the meat filling on top, and form them into cutlets.

Dredge the cutlets in breadcrumbs and fry them in a small amount of vegetable oil. Serve the cutlets hot, arranged on lettuce leaves and drizzled with sour cream.

The filling for the cutlets can vary; for example, you can use sautéed mushrooms with onions, grated cheese with herbs, or chopped hard-boiled eggs with herbs.
