Improving the Flavor Qualities of Pickled or Salted Cucumbers

Sometimes you open a jar of pickles only to find they’re too salty or a bit sour—not quite to your taste. When that happens, I pour the cucumbers out of the jar and rinse them with cold well water. Then, I dissolve three tablespoons of sugar in a quart of cold water and pour this solution over the cucumbers. After a few days, you won’t recognize those pickles—they’ll taste amazing!
