Soak 1 pound of beans for 2 hours. Cook until they are partially tender.
Cut the meat into pieces and sauté in fat until it’s halfway cooked.
Sauté the onion until golden brown, then add a tablespoon of flour.
Dilute everything with a cup of broth.
Mix it all with the beans and transfer to a clay pot, adding salt, bay leaf, and pepper.
Place it in the oven for an hour.
