FIGURED EGGS

Start by cutting off the wide ends of the hard-boiled eggs and carefully removing the yolks. In a bowl, mix the grated cheese, butter, yolks, mayonnaise, and tomato until you achieve a smooth consistency. Season with salt to taste.

Fill the egg whites with the mixture. Top them with the caps made from the tomato, use peas for the “eyes,” and a small piece of tomato for the “mouth.”

Place the egg on a leaf of green lettuce or a slice of cucumber, and surround it with the remaining filling.
