How to Preserve Dill and Keep Its Intense, Pleasant Aroma

There are many ways to preserve dill: some dry the herbs and store them in glass jars, while others opt for salting. However, overgrown dill is not very useful for most purposes.

“We harvest young dill. After cutting it, we run it through a meat grinder, resulting in a juicy mixture with a syrup-like consistency. A little salt is added, and then we seal it in jars and store them in the refrigerator. That’s the whole trick. This way, our soups and borscht turn out great in the winter,” shares one home cook.
