Chebureki with Kefir

Ingredients:

  • Flour – as needed for the dough
  • 1 cup of kefir
  • 1 egg
  • 14 oz (400 g) of ground meat
  • 2-3 onions
  • Salt and black pepper to taste

Instructions:

  1. In a bowl, pour in the kefir, add the egg and salt. Whisk together with a fork.
  2. Gradually add flour, mixing until combined. When the dough becomes thick, transfer it to a floured surface and knead it. The dough should be firm but not too soft.
  3. Let the dough rest on the counter for 20 minutes.
  4. Meanwhile, prepare the filling. Combine the ground meat with the chopped onions, add a little water, salt, and black pepper. The filling should be somewhat runny.
  5. Divide the dough into 10 pieces (or as many as you prefer). Roll each piece out, placing a spoonful of filling in the center.
  6. Shape the dough into a cheburek (a type of fried pastry). To prevent the filling from leaking out, roll the edges of the cheburek with a rolling pin.
  7. Trim any excess dough with a pastry cutter.
  8. Fry the chebureks in preheated oil over medium heat, cooking on both sides until golden brown.
  9. Once cooked, place the chebureks on paper towels to absorb any excess oil.
