Ingredients:
- Flour – as needed for the dough
- 1 cup of kefir
- 1 egg
- 14 oz (400 g) of ground meat
- 2-3 onions
- Salt and black pepper to taste
Instructions:
- In a bowl, pour in the kefir, add the egg and salt. Whisk together with a fork.
- Gradually add flour, mixing until combined. When the dough becomes thick, transfer it to a floured surface and knead it. The dough should be firm but not too soft.
- Let the dough rest on the counter for 20 minutes.
- Meanwhile, prepare the filling. Combine the ground meat with the chopped onions, add a little water, salt, and black pepper. The filling should be somewhat runny.
- Divide the dough into 10 pieces (or as many as you prefer). Roll each piece out, placing a spoonful of filling in the center.
- Shape the dough into a cheburek (a type of fried pastry). To prevent the filling from leaking out, roll the edges of the cheburek with a rolling pin.
- Trim any excess dough with a pastry cutter.
- Fry the chebureks in preheated oil over medium heat, cooking on both sides until golden brown.
- Once cooked, place the chebureks on paper towels to absorb any excess oil.
