Garlic Seasoning

This sauce is made not only from garlic cloves but also from the green shoots—known as garlic scapes—that have little bulbs at the tips. Everything is passed through a meat grinder, seasoned to taste, and then canned. Now it’s ready to be served, enticing everyone’s appetite.

This garlic sauce pairs especially well with fried fish, like crucian carp. Place a serving of fried fish in a dish, pour the garlic sauce over it, cover tightly with a lid, and let it sit on low heat for a minute or two. Then add another serving and pour more sauce over it; repeat this process for a third serving. Once the last portion is added, keep the dish covered for 15 to 20 minutes. After that, it’s ready to be served. The garlic sauce elevates the flavor of the fish beautifully.
