Braised Garlic Scapes


Ingredients:
1 lb garlic scapes
1 onion
1 carrot
3 tablespoons oil
7 oz sour cream
fresh dill
salt, pepper

Start by rinsing the garlic scapes and cutting them into pieces about 1.2 inches long. Place them in a pot, cover with water, and bring to a boil. Cook for 5 minutes, then drain in a colander. Meanwhile, slice the onion into half-moons and grate the carrot using a large grater. In a heavy-bottomed skillet or pot (like cast iron), sauté the onion and carrot in oil for 5 minutes. Add the drained garlic scapes, stir, and cook everything together for another 2-3 minutes.

Season with salt and pepper, then stir in the sour cream and let it simmer for another 5 minutes. Finally, add the fresh dill just before serving. This dish is incredibly simple and delicious. It can be enjoyed on its own with some bread, or paired with potatoes or meat. It tastes great both hot and cold.
