
STRAWBERRY DRINK
Select and thoroughly wash the strawberries, then press them through a fine sieve (use the leftover pulp to make compote).
Mix the sieved strawberries with chilled cream and whip until light and smooth. Add sugar to taste.
Ingredients: 150g strawberries, 2.5 cups cream, sugar.
WILD STRAWBERRY DRINK
Mash the prepared wild strawberries.
To cold boiled or pasteurized milk, add sugar, the mashed strawberries, and a pinch of salt.
Whip the mixture until smooth.
Serve the drink chilled.
Ingredients: 2.5-3 cups milk, 1 cup wild strawberries, 2-3 tablespoons sugar, a pinch of salt.
MIXED BERRY DRINK (Strawberries, Wild Strawberries, Raspberries)
Press the washed berries through a sieve.
Pour the juice into a pot and place it in a cool spot.
Put the leftover berry pulp in another pot, cover with hot water, add sugar, stir well, and bring to a boil.
Then move the pot to the edge of the stove, pour in potato starch previously dissolved in cold boiled water, return it to the heat, and stir thoroughly until it comes to a boil again.
When the jelly cools to 104-122°F (40-50°C), pour in the chilled juice and mix in lemon juice or citric acid.
This method preserves all the vitamins.
The jelly can be either liquid or quite thick.
The thicker version is served with ice cream.
For a medium thickness, use 3 liters of water, 400-500g of berries, 100g of sugar, 2g of citric acid, and 3 tablespoons of starch.
