Eggs in Sour Cream
Cut hard-boiled eggs into large pieces, place them in a greased skillet, season with salt, cover with sour cream, and bake in the oven for 20 minutes.
For 8 eggs: 1 cup sour cream, 1/2 tablespoon butter, and salt to taste.
Meat-Filled Omelet
Whisk eggs with milk and salt. Fry the omelet in butter.
Thinly slice ham, sausage, cooked liver, or beef. Sauté the meat in oil, place it on top of the omelet, and fold the edges over.
For 4 eggs: 3-4 tablespoons milk, 2 tablespoons butter, 100 g (about 3.5 oz) sausage, ham, cooked liver, or beef, and salt to taste.
Scrambled Eggs with Potatoes
Peel and boil the potatoes. Drain them, then mash well.
Add milk, melted butter, and salt, and mix until smooth.
Transfer the mashed potatoes to a greased dish sprinkled with breadcrumbs. Smooth it out, make indentations, place a pat of butter in each, crack the eggs on top, and bake in the oven.
For 4 eggs: 500 g (about 1.1 lb) potatoes, 2 1/2 tablespoons butter, 1/2 cup milk, 1 tablespoon breadcrumbs, and salt to taste.
