Baked Fish Meatballs Nestled in Mashed Potato Cups

Ingredients:

  • Ground fish (fish mince) — 500–700 g (about 1.1–1.5 lbs)
  • Potatoes — 5–7
  • Eggs — 3 whole eggs + 1 yolk
  • Onions — 2, chopped
  • Flour — 2 tablespoons
  • Salt and black pepper to taste
  • Dill and lettuce leaves for serving

Instructions:

  1. Season the fish mince with salt and pepper. Add one egg and the chopped onions to the fish mince and mix until combined.
  2. Boil the potatoes until tender. Let them cool, then mash the potatoes with a potato masher. Add the flour, two eggs, salt, and pepper to the mashed potatoes and mix well.
  3. Grease your hands with vegetable oil. Shape the potato mixture into small cups to hold the meatballs.
  4. Place the formed balls of fish mince on top of the potato cups.
  5. Lightly brush the potato cups with the beaten egg yolk.
  6. Bake the assembled meatballs and potato cups in the oven until golden brown.
  7. Serve the meatballs on lettuce leaves and garnish with chopped dill.
