Crepes with Mascarpone and Cherries

Ingredients:

For the batter:

  • 1 cup milk (200g)
  • 1 cup sparkling water (200g)
  • 3 eggs
  • 1.5 cups flour
  • Pinch of salt
  • 2 tablespoons sugar
  • 3 tablespoons oil

For the filling:

  • 250g mascarpone cheese
  • 2-3 tablespoons powdered sugar
  • Pitted cherries

Mix the mascarpone with the powdered sugar… Adjust the sweetness to your taste (some prefer it sweeter, while others like it less so…). It’s best to transfer the mixture into a piping bag for easier application on the crepes.

On each crepe, place a row of cherries and then fold the crepe over once. Next, squeeze a thick strip of mascarpone from the piping bag onto the crepe. Then, roll everything up together. The finished crepes can be enjoyed right away… but they taste even better when pan-fried in oil! They don’t need any sauce or gravy, as the mascarpone melts during frying, creating a sweet sauce on its own!
