- 200 g of beans (about 7 oz)
- 2 eggs
- 150 g of cheese (about 5.3 oz)
- 3 tablespoons of milk
- Salt and black pepper to taste
- Oil for greasing the molds
Soak the beans in warm salted water for a couple of hours, or overnight. Cook the beans until they are tender.
Grate the cheese finely. Beat the cheese into the eggs, add the milk, and season with salt and pepper. Mix the cheese mixture well until smooth, or blend it with an immersion blender.
Grease muffin or cupcake molds with oil and place a layer of beans in the bottom of each mold.
Spoon about a tablespoon of the cheese mixture on top of the beans.
Add another layer of beans, then more cheese mixture. Alternate layers of beans and cheese mixture until the molds are filled.
Place the molds in a preheated oven at 180 °C (350 °F) and bake until cooked through. Once the casseroles have cooled, remove them from the molds and garnish as desired.
