Cheesy Polenta with Sautéed Peppers and Garlic

Ingredients:

  • 150 g grated cheese
  • 2 bell peppers (red and yellow)
  • 2 tablespoons minced garlic
  • 1 onion (red or white)
  • 1/3 of a chili pepper
  • 1 cup cornmeal
  • 2 teaspoons butter
  • 2 cups water
  • 1 tablespoon sugar
  • Salt to taste

Instructions:

  1. Combine the water, salt, sugar, and cornmeal in a pot. Stir continuously until the mixture comes to a boil.
  2. Add the butter and part of the grated cheese, and cook for 10 minutes. Transfer the corn mixture to a baking dish.
  3. Sauté the sliced onion, julienned bell peppers, minced garlic, and chili pepper in oil in a skillet. Season with salt.
  4. Arrange the sautéed vegetables around and on top of the corn mixture. Sprinkle with the remaining grated cheese.
  5. Bake in a preheated oven until cooked through. Garnish with fresh herbs and serve.
