
Chicken Tiramisu
Ingredients:
- 600 g (approx. 1.3 lbs) chicken breast
- 1 egg
- 1/2 carrot
- 2-3 cloves garlic
- Fresh thyme and rosemary to taste
- 1-2 tablespoons flour
- Salt and black pepper to taste
- 200 g (approx. 7 oz) mascarpone cheese
- 100 g (approx. 3.5 oz) feta cheese
- 50 ml (approx. 1.7 fl oz) heavy cream (33% fat)
- 2-3 tablespoons rice (a mix of brown and wild rice)
- A handful of salad greens
Rinse the chicken breast, pat the chicken dry, and chop the chicken in a food processor. Add the chopped carrot, garlic, and a bit of thyme and rosemary to the mixture. Season the mixture with salt and black pepper. Incorporate the egg and the flour, mixing the mixture well.
Form thin patties from the mixture. Fry the patties in a skillet with olive oil over medium heat until the patties are cooked through, turning them once to brown both sides. Blot the cooked patties with a paper towel.
Cook the rice in salted water according to the package instructions. Let the rice cool.
Combine the mascarpone and feta cheese. Blend the cheeses with a mixer until smooth. Add a little heavy cream to loosen the cheese mixture if it seems too thick.
Assemble the “tiramisu” by layering the chicken patties with the cheese cream and the salad greens. Finish with a layer of cream on top. Sprinkle the rice over the assembled dish.
