Creamy Braised Garlic Scapes — a Quick Spring Side

Braised garlic scapes
Ingredients:
1 lb garlic scapes
1 onion
1 carrot
3 tablespoons oil
7 oz sour cream
fresh dill
salt, pepper

Rinse the garlic scapes and cut them into pieces about 1.2 inches long. Place them in a pot, cover with water, and bring to a boil. Cook for 5 minutes, then drain in a colander. Meanwhile, slice the onion into half-moons and grate the carrot using a large grater. In a heavy-bottomed skillet or pot (like cast iron), sauté the onion and carrot in oil for 5 minutes. Add the drained garlic scapes, stir to combine, and cook everything together for another 2-3 minutes.

Season with salt and pepper, then stir in the sour cream and simmer for another 5 minutes. Add the fresh dill just before serving. This dish is simple and delicious. It can be enjoyed on its own with some bread, or paired with potatoes or meat. It tastes great both hot and cold.
