Pasta with Liver and Caramelized Onions

Chicken Liver Pasta Recipe

Ingredients

  • 2 medium onions
  • 500g chicken liver (about 1.1 lbs)
  • 200ml heavy cream (about ¾ cup)
  • Vegetable oil
  • 4–5 tablespoons broth (from cooking pasta)
  • Salt and pepper
  • Pasta (such as spaghetti)

Instructions

  1. Heat a little vegetable oil in a skillet and sauté the chicken liver, cut into small pieces, until browned on both sides.
  2. Bring a large pot of water to a boil for the pasta.
  3. Cook the pasta in salted water until al dente.
  4. Peel and slice the onions into rings (or half-rings).
  5. Sauté the onions in oil in a second heavy-bottomed skillet until they turn a deep caramel brown.
  6. Pour in the heavy cream, add the sautéed liver, and season with salt and pepper.
  7. Add the cooked pasta and 4 tablespoons of the reserved pasta water.
  8. Toss everything together, heat for 1–2 minutes, and serve immediately!
