Chicken Liver Pasta Recipe
Ingredients
- 2 medium onions
- 500g chicken liver (about 1.1 lbs)
- 200ml heavy cream (about ¾ cup)
- Vegetable oil
- 4–5 tablespoons broth (from cooking pasta)
- Salt and pepper
- Pasta (such as spaghetti)
Instructions
- Heat a little vegetable oil in a skillet and sauté the chicken liver, cut into small pieces, until browned on both sides.
- Bring a large pot of water to a boil for the pasta.
- Cook the pasta in salted water until al dente.
- Peel and slice the onions into rings (or half-rings).
- Sauté the onions in oil in a second heavy-bottomed skillet until they turn a deep caramel brown.
- Pour in the heavy cream, add the sautéed liver, and season with salt and pepper.
- Add the cooked pasta and 4 tablespoons of the reserved pasta water.
- Toss everything together, heat for 1–2 minutes, and serve immediately!
