Roast Goose with Apples and Oranges
- 1 whole goose
- 3 tablespoons honey
- 4 apples
- 4 oranges
- Salt and pepper to taste
- 2-3 cloves garlic
Rinse the goose thoroughly. Mix the honey with salt and pepper in a bowl, then crush the garlic and add it to the mixture. Rub this blend all over the goose.
Make small incisions in the skin to allow the fat to drain during cooking. Core the apples and cut them into pieces. Slice the oranges, leaving the skin on. Stuff the goose with the fruit mixture and sew it up with kitchen twine.
Place the goose in a roasting pan, cover it with a lid, and roast for 1 1/2 hours, basting it with the fat that renders out. After that, remove the lid and let it brown for an additional 20 minutes (use the grill setting if your oven has one).
Remove the twine before serving.
