Ingredients:
- Flour — as needed for the dough
- 1 cup kefir
- 1 egg
- 14 oz (400 g) ground meat
- 2–3 onions
- Salt and black pepper to taste
Instructions:
- Pour the kefir into a bowl, add the egg and salt. Whisk the mixture with a fork.
- Gradually add flour to the bowl, mixing until the dough comes together. When the dough becomes thick, transfer it to a floured surface and knead it until smooth. The dough should be firm but not too soft.
- Let the dough rest on the counter for 20 minutes.
- Meanwhile, make the filling. Combine the ground meat and chopped onions, then add a little water, salt, and black pepper. Aim for a slightly loose filling.
- Divide the dough into 10 pieces (or as many as you prefer). Roll each piece into a circle and place a spoonful of filling in the center.
- Fold each circle over the filling to form a cheburek (a fried pastry). To prevent the filling from leaking, roll the edges of the cheburek with a rolling pin.
- Trim any excess dough with a pastry cutter.
- Fry the chebureks in preheated oil over medium heat, cooking each side until golden brown.
- When cooked, transfer the chebureks to paper towels to absorb excess oil.
