Crispy Chebureki Made with Kefir


Ingredients:

  • Flour — as needed for the dough
  • 1 cup kefir
  • 1 egg
  • 14 oz (400 g) ground meat
  • 2–3 onions
  • Salt and black pepper to taste

Instructions:

  1. Pour the kefir into a bowl, add the egg and salt. Whisk the mixture with a fork.
  2. Gradually add flour to the bowl, mixing until the dough comes together. When the dough becomes thick, transfer it to a floured surface and knead it until smooth. The dough should be firm but not too soft.
  3. Let the dough rest on the counter for 20 minutes.
  4. Meanwhile, make the filling. Combine the ground meat and chopped onions, then add a little water, salt, and black pepper. Aim for a slightly loose filling.
  5. Divide the dough into 10 pieces (or as many as you prefer). Roll each piece into a circle and place a spoonful of filling in the center.
  6. Fold each circle over the filling to form a cheburek (a fried pastry). To prevent the filling from leaking, roll the edges of the cheburek with a rolling pin.
  7. Trim any excess dough with a pastry cutter.
  8. Fry the chebureks in preheated oil over medium heat, cooking each side until golden brown.
  9. When cooked, transfer the chebureks to paper towels to absorb excess oil.
