Crispy Fried Tomatoes Baked in Sour Cream

Select firm tomatoes, wash them, and slice them into 1 cm-thick rounds. Sprinkle the slices with salt and ground pepper, coat them in flour, and fry them until golden. Place the fried slices in a saucepan or deep skillet greased with fat. Pour the sour cream over the tomatoes, sprinkle them with breadcrumbs, drizzle them with more fat, and bake in the oven.

For every 2.2 lbs (1 kg) of tomatoes, use:
– 3 tablespoons of butter
– 3 tablespoons of all-purpose flour
– 1 tablespoon of breadcrumbs
– 3 peppercorns

For the sauce:
– 2 cups of broth
– 1 tablespoon of all-purpose flour
– 1 tablespoon of butter
– 3/4 cup of sour cream.
