Potato Draniki with Chicken and Wild Mushrooms
Ingredients
- 6 potatoes
- 1 1/2 tablespoons flour
- 1 egg
- 2 onions
- 400g chicken fillet (about 0.9 lbs)
- 120g wild mushrooms (about 4.2 oz)
- Vegetable oil, as needed
- 50g sour cream (about 1.8 oz)
- 1 cup chicken broth
- Salt and spices, to taste
Instructions
Peel the potatoes and grate them finely. Add salt to the grated potatoes. Peel one onion and chop it finely, then mix it with the potatoes. Beat in the egg and add the flour. Mix everything thoroughly.
Heat a skillet with oil, spoon the potato mixture onto the skillet, and fry the pancakes on both sides until golden brown.
Cut the chicken fillet into small pieces and chop the remaining onion. Sauté them together in a deep skillet.
Boil the wild mushrooms in salted water until tender. Once the mushrooms are cooked, add them to the sautéed chicken and onion. Pour in the chicken broth, add spices, and simmer for 5 minutes. Stir in the sour cream and continue to simmer for another 10 minutes.
Serve the draniki topped with the mushroom and chicken sauce. Optionally, garnish with fresh herbs.
